Wild asparagus can be found in the spring, between April and June. It is more common in Italy and the South of France – in fact, it can be bought over there at street markets. It is earthy, grassy and nutty, very much reminiscent of the surrounding terrain. It also has been harvested on the Greek Islands for centuries. This soup makes a great first course. If you can’t find wild asparagus, use regular asparagus when in season, from the end of April until June.
