Fresh artichokes require a bit of hands-on work to prepare, but the results are worth it. If your artichokes are small, use five or six instead of four—as many as you can fit comfortably in your slow cooker. Use gluten-free bread crumbs to make this gluten-free, and use a soy-free vegan Parmesan to make it soy-free.

Ingredients

  • 1 tablespoon olive oil (optional)
  • 3 garlic cloves, minced
  • 1 cup chop

Method

  1. For the best flavor, heat the oil in a medium-size skillet over medium heat. Add the garlic and cook until fragrant, about 30 seconds. Stir in the mushrooms and cook for 3 minutes longer. Alternatively, omit the oil and sauté these ingredients in a few tablespoons of water or combine them in a microwave-safe bowl with a little water, cover, and microwave for 2 minutes. R
