Orange marmalade and lemon and lime juice combine to infuse the beets with citrus sweetness. For a shortcut, use purchased orange marmalade. Use the smallest beets you can find for the best flavor. The size of the beets will dictate the length of cooking time needed.

Ingredients

  • 3 tablespoons Orange Marmalade with a Twist of lemon
  • Juice of 1 lemon

Method

  1. In a small bowl, combine the marmalade, lemon juice, and lime juice. Add the oil, stirring to blend.
  2. Place the beets in the slow cooker and add the citrus mixture, stirring to coat. Season to taste with salt and pepper. Cover and cook on Low until the beets are tender, 6 to 8 hours, stirring once halfway through if possible.
