Yes, canned “creamed” corn is vegan—there is no cream in it, despite the name. This rich, comforting side dish is great as is or, for extra zing, add some minced canned green chiles or chipotles in adobo. To make this recipe soy-free, use a soy-free vegan cream cheese and a soy-free nondairy milk.

Method

  1. For the best flavor, heat the oil in a small skillet over medium-high heat. Add the onion and sauté until softened, about 5 minutes. Alternatively, omit the oil and sauté the onion in a few tablespoons of water or place it in a microwave-safe bowl with a little water, cover, and microwave for 2 minutes.
  2. Generously oil the insert of the slow cooker or spray it w
