These are hearty nibbles that can be taken to the beach to warm up over an open fire. Not so adventurous? A grill on the back deck gives the same effect.

For the dipping sauce, purée all the ingredients, except the oil, until smooth. Slowly pour in the oil while blending and season to taste.
For the kebabs, soak the bamboo skewers (if using) in water while preparing the other ingredients. Boil the potatoes, uncovered, in salted water until tender, about 12 minutes. Drain and let them cool to room temperature.
