Striped bass has a mild taste and a lean texture, and served stuffed it is an appropriate size for one person. The presentation is fabulous if you are dining alfresco.

Julienne (cut into thin strips) the leeks, zucchini, celery, and red pepper. Toss them with the wine and olive oil and season lightly.
