Striped bass has a mild taste and a lean texture, and served stuffed it is an appropriate size for one person. The presentation is fabulous if you are dining alfresco.

Ingredients

2 medium leeks, white and light green parts only 2

Method

Julienne (cut into thin strips) the leeks, zucchini, celery, and red pepper. Toss them with the wine and olive oil and season lightly.

Preheat the grill to medium-high and place on a fish rack to heat (or make sure the grill is very clean). Rinse the striped bass, and fill the cavities with the julienne vegetables. Place a few lemon slices, 2 sprigs of thyme, and 2 basil leaves inside e
