When corn is in season, enjoying it right on the cob is the ideal way to appreciate it-in its original serving format. But while I appreciate the classic butter and salt combination, sometimes I look for that little something extra, especially if I’m entertaining.

In a food processor, pulse the butter with the green onion, oregano, and cilantro until smooth.
Gently peel back the husk of the corn and pull off the silk. Rub each ear generously with the herb butter. Fold back the husks to cover the corn, tie the tops of the husks with twine, and chill for at least 20 minutes and up to a day.
