Like a ray of sunshine, this thick, creamy concoction is the best way to start your day. Truly, breakfast in a glass.

Add all the ingredients except the ice to a blender and purée until smooth. Add the ice and pulse to crush. Pour the mixture into 4 tall glasses, garnish with mint sprigs, and serve immediately.
Alternatively, the mixture can be blended (without the ice) up to 3 hours in advance and poured over ice to serve.
