For the dressing, whisk the balsamic vinegar with the mustard. Slowly pour in the olive oil while whisking. Season to taste. If the dressing seems thick, whisk in 1 to 2 Tbsp (15 to 30 mL) of water. This will allow the dressing to coat the arugula without weighing it down.
