I make this at home at least once a year just because it’s the perfect way to celebrate fall.

For the pastry, combine the flour with the salt. Cut in the butter and shortening until the mixture has a roughly even crumbly texture. Add the lemon juice and cold water—begin with 4 Tbsp (60 mL) water and add more if necessary, 1 Tbsp (15 mL) at a time—and blend just until the dough comes together. Shape into a disk, then wrap it and chill for 30 minutes.
