Properly cooked red cabbage is a beautiful thing, and very affordable, too!
| unsalted butter |
Melt the butter in a heavy-bottomed saucepot and cook the onion until translucent. Add the apple, cabbage, apple cider, vinegar, sugar, and nutmeg and simmer, covered, for 15 minutes or until the cabbage is tender. Season to taste and serve.
