Even though the weather cools off, many of us grill all year round. Even wintry ingredients like fennel and apples hint at warmer weather when grilled just a little.

For the cranberry vinaigrette, simmer the cranberries, sugar, onion, and rosemary with ½ cup (125 mL) water until the cranberries “pop,” about 20 minutes. Remove the pot from the heat and cool to room temperature. Whisk in the Dijon mustard, then slowly whisk in oil. Season to taste.
