The original tiramisu is truly spectacular, but is definitely a labor of love. This homemade pudding has all the key elements of tiramisu but is simpler and more casual.
Heat 3 cups (750 mL) of the milk and the instant coffee until just below a simmer. In a bowl, whisk the remaining 1 cup (250 mL) milk, egg yolks, and cornstarch. When the milk is heated, whisk the sugar into the eggs. Slowly whisk the hot milk into the egg mixture, stirring constantly. Return the milk mixture to the pot and whisk over medium heat until thick and glossy, about 5 minutes. Remove
