Lemon meringue pie meets cheesecake, and in little bites that make you believe they’re low in calories. What a crowd pleaser!

Ingredients

Crust

cups graham cracker crumbs

Method

Preheat the oven to 350°F (180°C). Line four 12-cup mini muffin tins (48 cups) with paper liners.

For the crust, combine all the ingredients until they’re evenly blended and crumbly. Press the crumbs into the bottom of the mini muffin cups.
