Gzik is a cheese spread that differs dramatically depending on who is making it. The basic recipe is so simple that everyone has their own version. It’s popular spread on buttered rye bread, but my grandmother Zosia loved to feed me her traditional variety with freshly boiled potatoes and butter. The base of gzik is a Polish farmer cheese called twaróg, which is sold in thick disks—or you can make your own. You can substitute twaróg with farmer c
