Warsaw has been named one of the most vegan cities in the world—almost every restaurant has at least two plant-based dishes on the menu. During a Sunday brunch at the Palace of Culture and Science, a beautiful high-rise filled with bars, theaters, and restaurants, I had a chance to try a vegan sunflower seed spread that intrigued me. I had never tasted a spread so creamy, nutty, and tangy. Naturally, I had to re-create this at home. My addition of cold-pressed rapeseed oil makes this herb-r
