Leniwe means “lazy,” which is the perfect word for these dumplings. Traditionally served in Poland as a comforting late-breakfast treat or even as a sweet lunch, they have a delightful texture that melts in your mouth and a complex, slightly sour flavor. Leniwe are usually made with curd twaróg, but if you prefer creamier ones (like I do), use a smoother cheese, or blend the cheese first. The secrets to my dumplings are the lemon zest, which makes them fresh and vibrant
