The way to begin a great chicken salad is as follows. If this is all you do, you will have an excellent chicken salad on your hands.


  • 1 tablespoon minced shallot
  • 1 tablespoon lemon juice, plus more to taste
  • ½ teaspoon kosher salt, plus more to taste
  • ¼ teaspoon freshly ground black pepper, plus more to taste
  • 1 cup/240 milliliters mayonnaise
  • cups/450 grams shredded or medium-diced cooked chicken
  • 2 celery ribs, cut into small dice


Combine the shallot, lemon juice, salt, and pepper in a large bowl and let the mixture sit for at least 10 minutes and up to 1 hour. Stir in the mayonnaise and mix until it’s uniformly combined. Fold the chicken and celery into the mixture. Taste and season with more lemon juice, salt, and pepper as desired. Add more mayonnaise if you wish.
