When a chef tries out a prospective cook, the chef will often ask the cook to prepare an omelet. This is a valuable indicator of a cook’s skills, beginning with simply knowing what pan to use. But we now have a variety of excellent nonstick pans available, so egg sticking should no longer be an issue. I do admire those chefs who have carefully seasoned and maintained their black, carbon steel pans so carefully that they have created a nonstick surface—these pans are reserved for omelets. My
