In a small bowl, combine the shallot, lime juice, and a pinch of salt and let sit for 10 minutes. Add the butter and mash it into the shallot with a fork. Add the chipotles and mix with a rubber spatula, then add the cilantro and continue mixing until everything is uniformly combined. It’s ready to serve, or you can roll it in plastic wrap into a tight cylinder and chill it in an ice bath, then refrigerate it till you are ready to use it.
