Frozen Veg and Pea Broth

Though this is a book dedicated to the wonder that is the frozen pea, there are many other excellent frozen vegetables. Here, I use a bag of mixed frozen veg that includes peas; if you’ve only got the peas, you can just use more or add a little extra frozen spinach. This is purposefully simple for those days when you’re running on empty in the fridge and freezer department, but feel free to use this recipe as a base to play with. Just remember the frozen veg doesn’t take long to cook.
