This is a ‘holiday’ pasta dish – a recipe for which you don’t need to buy all the usual storecupboard staples (oil, tomato paste, etc) that quickly crank up the shopping spend. It’s tasy as it is, but you can add your favourite seasonal veg.

Ingredients

  • 1 × 145-g (-oz) tin tuna in oil
  • 1 shallot or ½

Method

Drain the tuna and reserve the oil. Put 2 tablespoons of oil into a frying pan (skillet) with a lid, heat over a low heat, add the shallot or onion and fry for 6–8 minutes or until soft.

Stir in the lemon zest and juice, then scatter in the pasta. Pour in the stock, season with salt and freshly ground black pepper and bring to a simmer. Put the lid on the pan and simmer for 8–10 minutes
