Method

Heat the oil in a saucepan over a medium-low heat. Add the onion and fry for 10–12 minutes or until soft but not golden.

Tip in the chorizo, turn up the heat to medium and fry for 5 minutes or until turning golden. Stir in the garlic and cook for 1–2 minutes, then stir in the paprika and dried herbs.
