I love a couscous side. It’s so quick to cook as you literally just cover the couscous grains in boiling water, so this is really not a tricky dish to make. I like to use a range of colourful ingredients, which glisten like a platter of jewels. You can play around with the ingredients; I basically use salad ingredients and soft herbs with a few nuts and dried fruits, but you could add goats’ cheese or feta, harissa or a dressing – it’s totally up to you.
