I was told that kedgeree is one of the four things beginning with K that the Victorians introduced as breakfast, along with Kellogg’s, kippers and kidneys. Now, I’ve no idea if that’s true, but it’s a fun piece of dinner-party trivia. I prefer kedgeree as a brunch or a more involved dinner and I like to use undyed smoked haddock. Here, the sweetness of the peas really helps to cut through the smokiness of the fish.
