Peas and pork go well together in many guises – ham, pancetta, bacon, sausages, the list goes on… In a soup, I love how the pinkness of the ham pops against the vibrant green soup. It’s a great dish to serve at a relaxed dinner.

Ingredients

  • 1 tablespoon sunflower or vegetable oil
  • 1 onion, chopped
  • 1

Method

Heat the oil in a large saucepan over a gentle heat. Fry the onion for 10–12 minutes or until soft but not golden. Stir in the potato and garlic and fry for 1–2 minutes to soften a little.

Pour in the stock and milk and bring to the boil over a medium heat. Reduce to a simmer. Tip in the frozen peas, bring back to a simmer and cook for a few minutes or until the peas are warmed through.
