For me, nothing beats a pie when hosting a gathering of friends or family. There’s something both special and effortless about a pie, and it’s ideal for making in advance. I appreciate they’re not really effortless, but compared to cooking a full roast dinner, it’s not so bad. I usually serve a pie with buttery mash, which is why the sauce here is not super thick. If you prefer a thicker sauce, you can add an extra 1–2 tablespoons flour or use 150ml (5 fl oz) less stock.
