The perfect salad for asparagus season. Even though fresh peas can sometimes coincide with the asparagus season around June, unless I’ve picked them immediately before serving (which never happens on my tiny balcony), I still use frozen peas because I think the flavour is better. Plus it saves time. There’s something about an egg on a salad that I love. I think it’s because it makes it feel more substantial and the yolks add a lovely colour.
