When we were at uni together, my friend Bex made a dish that was basically fancy baked beans; she’d lace a tin of beans with onion and pepper before adorning her toast with them and crowning the dish with a good scattering of cheese. I’ve taken her dish and crossed it with a cowboy pie to create this bejewelled version. I find this way I don’t need any sides but, of course, you can serve it however you like.
