This is possibly one of the longest lists of ingredients for any recipe in this book, but I think it’s worth it. Most of the ingredients are found hanging around the fridge or storecupboard shelves. As with any stir-fry dish, the key is to prep everything before you start cooking so that nothing burns while you’re chopping. Noodles, peanut butter, lime, soy and peas are, for me, real comfort food – salty, sweet, umami and sour all in one mouthful.
