I can’t deny that fishcakes sometimes feel like a bit of a faff to make. I’ve made these ones as simple as possible by leaving off the breadcrumb coating, because I don’t think it’s necessary (although feel free to coat the fishcakes in beaten egg and then breadcrumbs, if you like). You can also try using tinned potatoes to make things even simpler.
