A simple way to make your frozen peas a little more special is to give them a mini-twist. I often fall back on frozen peas as a simple side dish and this makes me feel like I’ve made a little extra effort.

Ingredients

  • 400 g (14 oz) frozen peas
  • Zest of 1 lemon, juice of

Method

Bring a saucepan of salted water to the boil. Tip in the frozen peas and cook for 2–3 minutes or until they are fully defrosted and cooked through. Drain, then tip into a bowl.

Mash the peas with a masher (you can also pulse them in a food processor), then stir through the lemon zest and parsley. Season to taste with salt, pepper and a squeeze of lemon juice.
