This sauce is great for batching and freezing, ready for when you’ve run out of other ingredients. It’s a good base for sneaking in extra veg. If you want to bulk it out, bacon or ham are classic companions; you can add spinach and broccoli without having to blend it in, or do blitz it in if you want to – the choice is yours.

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 8 spring onions (scall

Method

Heat the oil in a frying pan (skillet) with a lid over a gentle heat. Add the onions and fry, covered, for 10–12 minutes or until soft but not golden.

Stir in the spring onions, turn up the heat to medium and fry for a couple of minutes before adding the garlic and cooking for a minute longer.
