I made these scones just before I took a 16-hour train journey from London to Copenhagen – they made terrific train snacks and were still tasting great five days into our holiday. I love how vibrant the peas make the scones and their flavour really pops with the cheese and chives.

Ingredients

Method

Place the frozen peas in a heatproof bowl and cover with freshly boiled water to defrost. Leave for a few minutes, then drain.

Tip the peas into a food processor, add 2 tablespoons of the buttermilk and a pinch each of salt and pepper, then blend to create a smooth-ish paste.
