Method
- Reduce the liquid in a pot over medium heat until it thickens to a sauce consistency, about 45 minutes. Skim the liquid as it reduces.
- Pass through a fine-mesh strainer.
- Reserve hot, covered, during service (in a hot water bath). This liquid can hold up to 1 month.
