  • 500 g / 1 lb 1.64 oz neutral mirror glaze
  • 200 g / 7.05 oz blackberry purée

Method

  1. Whisk together the neutral mirror glaze and blackberry purée until homogenous.
  2. Reserve under refrigeration until needed. Discard after 4 days.
