  • 300 g / 10.58 gianduja, finely chopped
  • 200 g / 7.05 oz cocoa butter

Method

  1. Bring the gianduja and cocoa butter to 38°C / 100°F.
  2. Pass through a fine-mesh strainer and reserve at the above temperature.
