Method

Prepare your mise en place.

Using a serrated knife, even off the top surface of each cake, then cut it crosswise into 3 layers of equal size. Set aside.

Place the simple syrup in a small bowl and set it aside.

To make the compote, combine the cherries with the sugar and kirschwasser in a medium heavy-bottomed saucepan over medium heat. Bring to a boil.
