Besciamella is a white sauce made of milk thickened with a cooked mixture of equal parts flour and butter, called a roux. Besciamella binds and enriches a variety of traditional baked pasta dishes such as Lasagne di Carne and pasticcio, a dish traditionally encased in pastry.
