Potato gnocchi are made from boiled or baked potatoes that have been passed through a ricer and bound with flour or a combination of flour and egg, to form a dough. The dough is rolled into ropes and cut into short sections; these pieces are pressed and curled on a gnocchi board, or over the tines of a fork or the holes of a grater to create indentations that catch and hold the sauce, and decrease the cooking time. Cooked spinach is sometimes added for color and flavor.
