The addition of saffron lends a lovely golden-yellow hue to this risotto. Saffron was historically used as a yellow-orange dye. During the years 1572 through 1576, the Flemish glass painter Valerio da Profondavalle was reported to have used saffron in his pigments to make the stained-glass windows of the Duomo in Milan more vibrant. When he wed, his apprentice allegedly added saffron to his master’s risotto as a joke.
