Grissini are crisp, slender breadsticks that originated in Turin. Traditionally baked with a sprinkle of coarse sea salt and black pepper, grissini make an excellent antipasto, wrapped in thin slices of prosciutto.
In a bowl, mix the flours, sugar, salt, yeast, warm water, and olive oil until the dough comes together.
Knead on a lightly floured surface until smooth, velvety, and elastic, 8 to 10 minutes.
