A “white” variation on the classic cacciatore preparation (see Pollo alla Cacciatora), this stew is made without tomato. Veal or chicken stock contributes the necessary liquid for braising. (Veal stock will create a thicker sauce and a more intense, meaty flavor; a combination can also be used.)

This preparation works very nicely with rabbit, as well as with chicken.
