Stracotto is a method as much as a recipe for braising meat, and the same dish is typically known as brasato in Piemonte and Lombardia. The meat is seasoned and marinated in a full-bodied red wine for one to two days, then braised in a combination of the red-wine marinade and puréed tomato. It is traditionally made with a lean cut of beef. Once braised, the meat is sliced thin, then baked and served with the reduced braising liquid; this offsets the dryness of the meat.
