Pork spareribs are marinated in an herb rub, browned in the oven, and then braised in a spicy tomato sauce in this luscious, mildly spicy preparation. Ribs give off a great deal of fat; therefore, as much oil as possible should be removed from the sauce once the ribs are cooked.
This recipe uses a cut called Saint Louis–style ribs, cut from a rack of spareribs.
