This is a classically Tuscan dish of pork loin, seasoned with a trito of chopped garlic, herbs, and spices. It is roasted with the traditional accompaniment of sliced potatoes tossed with onion, fennel, and herbs. The meat is cut from the bones in one piece and marinated; meat and bones are reassembled before roasting, and served together.
The potatoes may be roasted in the same pan as the pork (as is traditionally done), or cooked separately; either way, they are crisp and g
