Cannellini all’uccelletto means “beans, bird-style,” referring to beans that are cooked in the same manner that a variety of tiny birds are traditionally cooked in Tuscan cuisine. The beans are fully cooked, then stewed in puréed tomato and seasoned with garlic and sage. Cannellini Toscani are used in this recipe, but IGP varieties such as Sorana (another Tuscan variety) or Sarconi (from Basilicata) would also work well.
