Puntarelle is a variety of chicory with long, slender, serrated green leaves that look something like dandelion greens. During the winter months, hollow, whitish-green shoots grow from the center of the head. For this traditional Roman salad, the shoots are sliced very thin, soaked in cold water to soften the bitterness (soaking also causes the shoots to curl), and seasoned with a pungent garlic-anchovy dressing that further mellows the bitterness of the green.
