Sunchokes, also called Jerusalem artichokes, are the edible root of a variety of sunflower. Their Italian name is topinambur, which may be derived from topino, the Italian word for “mouse” (which is what a sunchoke resembles, to some), or they are sometimes known as patate selvatiche (“wild potatoes”). Sunchokes are grown in Piemonte and are a classic element of that region’s Bagna Cauda.
